Ingredients
  

2 cups frozen tater tots

6 large eggs

1 cup shredded cheddar cheese

1/2 cup diced bell peppers (red and green)

1/2 cup cooked and crumbled breakfast sausage (or diced bacon)

1/4 cup milk

Salt and pepper, to taste

2 tablespoons chopped fresh chives or green onions (for garnish)

Olive oil spray

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Tin: Lightly grease a muffin tin with olive oil spray to prevent sticking.

      Shape the Tater Tot Nests: In a mixing bowl, slightly thaw the tater tots (you can microwave them for about 1-2 minutes) to make them easier to manipulate. Then, place 3-4 tater tots into each muffin tin cup and press them into the shape of a nest, ensuring they cover the bottom and sides. Bake the nests in the preheated oven for 15 minutes until they are golden brown and crispy.

        Prepare the Filling: While the nests are baking, crack the eggs into a bowl and whisk together with milk, salt, and pepper until well combined. Stir in the diced bell peppers, cooked sausage, and half of the shredded cheese.

          Fill the Nests: Once the tater tot nests are baked and crispy, remove them from the oven. Carefully spoon the egg mixture into each tater tot nest, filling them to the top.

            Bake Again: Sprinkle the remaining cheese on top of the filled nests and return the muffin tin to the oven. Bake for an additional 12-15 minutes, or until the egg is fully set.

              Garnish and Serve: Remove the nests from the oven and let them cool for a couple of minutes. Use a small silicone spatula to carefully lift each nest out of the muffin tin. Garnish with chopped chives or green onions. Serve warm.
