1 large whole wheat tortilla

½ cup hummus (any flavor)

1 cup shredded mozzarella cheese

½ cup finely chopped bell peppers (red, yellow, and/or green)

½ cup chopped spinach (fresh or frozen, thawed and drained)

¼ cup finely diced red onion

¼ cup sliced black olives (optional)

1 teaspoon Italian seasoning

½ teaspoon garlic powder

1 tablespoon olive oil

Marinara sauce for dipping

Prepare the Tortilla: Lay the whole wheat tortilla flat on a clean surface.

    Spread the Hummus: Evenly spread the hummus over the surface of the tortilla, leaving a small border around the edges for easy rolling.

      Add the Fillings: Sprinkle the shredded mozzarella cheese over the hummus layer. Then, layer the chopped bell peppers, spinach, red onion, and black olives (if using) evenly over the cheese.

        Season: Sprinkle the Italian seasoning and garlic powder evenly across the top of the veggies.

          Roll It Up: Starting from one edge, carefully roll the tortilla tightly into a log shape. Ensure that the filling stays inside by applying gentle pressure.

            Slice into Bites: Using a sharp knife, slice the rolled-up tortilla into bite-sized pieces (about 1-inch thick).

              Toast (Optional): If you'd like your roll-up bites warm and slightly crispy, heat the olive oil in a skillet over medium heat. Add the slices and lightly toast for about 2 minutes on each side until golden brown.
