4 medium zucchinis

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls, diced

1/4 cup fresh basil leaves, chopped

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

1 tablespoon olive oil

Salt and pepper, to taste

1/2 cup grated Parmesan cheese

Balsamic glaze, for drizzling (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Zucchini: Slice the zucchinis in half lengthwise. Use a spoon to scoop out the seeds and some of the flesh, forming a boat shape. Be careful not to remove too much, as you want the boats to be sturdy for filling.

      Prepare the Filling: In a mixing bowl, combine the halved cherry tomatoes, diced mozzarella, chopped basil, minced garlic, olive oil, red pepper flakes (if using), salt, and pepper. Mix well until everything is evenly coated.

        Fill the Zucchini Boats: Arrange the hollowed zucchinis in a baking dish. Spoon the filling mixture into each zucchini boat, packing it in generously.
