Mushroom and Spinach Lasagna Rolls

9 lasagna noodles

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

12 oz (340 g) mushrooms, sliced (any variety you prefer)

5 oz (150 g) fresh spinach leaves

Salt and pepper, to taste

1 teaspoon dried oregano

1 teaspoon dried basil

15 oz (425 g) ricotta cheese

1 cup (100 g) grated Parmesan cheese, divided

1 cup (100 g) mozzarella cheese, shredded, plus extra for topping

2 cups (480 ml) marinara sauce

Fresh basil leaves, for garnish

Instructions
 

Cook the Lasagna Noodles: Bring a large pot of salted water to boil. Add the lasagna noodles and cook according to package instructions until al dente. Drain and lay the noodles flat on a clean surface to cool.

    Prepare the Mushroom and Spinach Filling: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute.

      Add Mushrooms and Spinach: Add the sliced mushrooms to the skillet and season with salt, pepper, dried oregano, and dried basil. Cook until the mushrooms are soft and have released their moisture, about 5-7 minutes. Add the fresh spinach and sauté until wilted. Remove from heat and let the mixture cool slightly.

        Create the Cheese Mixture: In a mixing bowl, combine the ricotta cheese, half of the grated Parmesan cheese, and the cooked mushroom-spinach mixture. Mix well until uniformly combined.

          Assemble the Lasagna Rolls: Preheat your oven to 375°F (190°C). Spread 1 cup of marinara sauce on the bottom of a 9x13-inch baking dish. Take one lasagna noodle, spread an even layer of the ricotta mixture along the length, then roll it up tightly. Place seam-side down in the baking dish. Repeat with the remaining noodles and filling.

            Top and Bake: Pour the remaining marinara sauce over the rolled lasagnas, ensuring they are well covered. Sprinkle with the remaining mozzarella and Parmesan cheese. Cover the dish with aluminum foil.

              Bake the Lasagna Rolls: Place the covered baking dish in the preheated oven and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.
