2 cups fresh or canned cherries, pitted and halved

1 tablespoon sugar (increase adjust if cherries are tart)

1 teaspoon lemon juice

1 teaspoon cornstarch

1 cup heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup cream cheese, softened

1 teaspoon almond extract (optional)

1 cup graham cracker crumbs

1/4 cup butter, melted

Fresh mint leaves for garnish (optional)

Prepare the Cherry Filling: In a medium bowl, combine the cherries, sugar, lemon juice, and cornstarch. Toss until the cherries are well-coated. If using fresh cherries, let the mixture sit for about 10-15 minutes. For canned cherries, you can skip this step.

    Make the Whipped Cream: In a separate bowl, beat the heavy whipping cream with an electric mixer on medium-high speed until soft peaks form. Gradually add the powdered sugar and vanilla extract, then continue to beat until stiff peaks form. Set aside.

      Create the Cream Cheese Mixture: In another bowl, mix the softened cream cheese with the almond extract (if using) until smooth. Gently fold in 1/3 of the whipped cream into the cream cheese mixture until well combined. Then gently fold in the remaining whipped cream until completely incorporated.

        Prepare the Crust Layer: In a small bowl, mix the graham cracker crumbs with the melted butter until evenly moistened.

          Layer the Parfaits: In serving glasses or bowls, start with a layer of graham cracker crust at the bottom. Follow this with a layer of the cream cheese mixture. Then add a layer of the cherry filling. Repeat the layers until the glasses are filled, finishing with cherries on top.

            Chill and Serve: Cover the parfaits with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld. For a decorative touch, garnish with fresh mint leaves before serving.
