Ingredients

1 cup rolled oats

1/2 cup natural peanut butter (or almond butter)

1/3 cup honey or maple syrup

1/2 cup chocolate chips (semi-sweet or dark)

1/4 cup ground flaxseed

1/2 cup shredded coconut (unsweetened)

1/2 teaspoon vanilla extract

A pinch of salt

Instructions

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, ground flaxseed, shredded coconut, and a pinch of salt. Stir them together until well mixed.

Combine Wet Ingredients: In a separate bowl, mix the peanut butter, honey (or maple syrup), and vanilla extract until smooth and fully combined.

Combine Mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Add in the chocolate chips. Stir everything together until the mixture is evenly combined, and all the oats are coated.

Chill the Mixture: Cover the bowl with plastic wrap or a lid, and refrigerate the mixture for about 30 minutes. This helps it to firm up, making it easier to roll into bites.

Form the Bites: Once chilled, remove the mixture from the refrigerator. Using your hands, scoop out about a tablespoon of the mixture and roll it into a ball. Repeat this process until all the mixture is rolled into energy bites.

Store: Place the energy bites in an airtight container. They can be stored in the refrigerator for up to a week or can be frozen for longer storage.
