1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

⅓ cup granulated sugar

1 can (14 oz) sweetened condensed milk

½ cup fresh lemon juice (about 2-3 lemons)

Zest of 2 lemons

1 tsp vanilla extract

1 cup heavy whipping cream

2 tbsp powdered sugar

Lemon slices and fresh mint for garnish

Instructions
 

Prepare the Crust:

    - In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the mixture resembles wet sand.

      - Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Use the back of a measuring cup to ensure it's packed tightly and evenly. Refrigerate while preparing the filling.

        Make the Filling:

          - In a large mixing bowl, whisk together the sweetened condensed milk, fresh lemon juice, lemon zest, and vanilla extract until smooth and well combined.

            Whip the Cream:

              - In a separate bowl, using an electric mixer, whip the heavy cream and powdered sugar until stiff peaks form. This should take about 2-3 minutes.

                Combine:

                  - Gently fold one half of the whipped cream into the lemon filling mixture until fully incorporated. Then, delicately fold in the remaining whipped cream until no streaks remain, being careful not to deflate the mixture.

                    Assemble the Pie:

                      - Pour the lemon filling into the prepared graham cracker crust and spread it out evenly with a spatula. Cover the pie with plastic wrap or foil and refrigerate for at least 4 hours, or until set (overnight is even better!).

                        Serve:

                          - Once set, slice the pie and garnish each piece with a slice of lemon and a sprig of fresh mint before serving.
