1 cup graham cracker crumbs

1/4 cup powdered sugar

1/2 cup unsalted butter, melted

1 cup heavy whipping cream

1/2 cup cream cheese, softened

1 tsp vanilla extract

2 cups fresh strawberries, hulled and chopped

2 tbsp honey (or to taste)

Fresh mint leaves for garnish (optional)

Prepare the Base: In a medium mixing bowl, combine the graham cracker crumbs, powdered sugar, and melted butter. Mix until the mixture resembles wet sand.

    Form the Base: Using a mini muffin tin, firmly press a tablespoon of the graham cracker mixture into each cavity to form a base for the bites. Compact it well to ensure it holds together. Place the tin in the refrigerator to set while you prepare the filling.

      Make the Whipped Cream: In a separate bowl, whip the heavy cream with a hand mixer or stand mixer until soft peaks form. Gradually add in 2 tablespoons of powdered sugar and continue whipping until stiff peaks form. Set aside.

        Prepare the Cream Cheese Mixture: In another bowl, beat the softened cream cheese and vanilla extract until smooth. Fold in the whipped cream gently until fully combined, being careful not to deflate the mixture.
