1 cup rolled oats

1/2 cup almond butter (or any nut butter of your choice)

1/4 cup honey or maple syrup

1/2 cup mixed nuts (such as almonds, walnuts, and pecans), chopped

1/4 cup dried fruit (such as cranberries, raisins, or apricots), chopped

1/4 cup dark chocolate chips or cacao nibs

1/4 teaspoon salt

1 teaspoon vanilla extract

Optional: 1/4 cup seeds (such as pumpkin seeds or sunflower seeds)

Instructions
 

Prepare the Pan: Line an 8x8 inch (or similar size) baking dish with parchment paper, leaving some overhang on the sides for easy removal later.

    Mix Wet Ingredients: In a medium microwave-safe bowl, combine the almond butter and honey (or maple syrup). Microwave on high for about 30 seconds until warmed and slightly runny. Stir in the vanilla extract until smooth.

      Combine Dry Ingredients: In a large mixing bowl, add the rolled oats, chopped mixed nuts, dried fruit, chocolate chips (or cacao nibs), optional seeds, and salt. Mix until evenly combined.

        Combine Wet & Dry Mixtures: Pour the almond butter mixture over the dry ingredients. Stir with a spatula or wooden spoon until everything is well-coated and combined.

          Press into Pan: Transfer the mixture into the prepared baking dish. Press it firmly down with your hands or a flat spatula to create an even layer. Make sure it's compact to help the bars hold together.

            Chill: Refrigerate the mixture for at least 1 hour, or until firm. This chilling process will help the bars set.

              Slice and Serve: Once set, lift the bars out of the pan using the parchment overhang and place them on a cutting board. Cut into desired bars or squares.

                Store: Store any leftovers in an airtight container in the refrigerator for up to a week, or freeze for longer storage.
