1 ½ cups milk (dairy or non-dairy)

2 large apples, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

1/3 cup maple syrup (adjust based on your sweetness preference)

2 large eggs

1 teaspoon vanilla extract

1 teaspoon cinnamon

½ teaspoon nutmeg

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup chopped walnuts (optional)

1/2 cup raisins or dried cranberries (optional)

1 tablespoon melted coconut oil or butter (for greasing)

Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking dish with melted coconut oil or butter to prevent sticking.

    Prepare the mixture: In a large bowl, combine the rolled oats, diced apples, cinnamon, nutmeg, baking powder, and salt. Stir well to evenly distribute.

      Whisk the wet ingredients: In a separate bowl, whisk together the milk, maple syrup, eggs, and vanilla extract until fully combined.
