1 lb ground beef

1 medium onion, diced

3 cloves garlic, minced

1 cup long-grain white rice, uncooked

1 (14.5 oz) can diced tomatoes with green chilies

2 cups beef broth

1 cup corn kernels (fresh, frozen, or canned)

2 cups shredded cheddar cheese

1 teaspoon smoked paprika

1 teaspoon chili powder

½ teaspoon salt

½ teaspoon black pepper

1 tablespoon olive oil

Fresh cilantro or parsley, for garnish (optional)

Instructions
 

Preheat & Prepare: Preheat your oven to 350°F (175°C). Gather all your ingredients and an oven-safe skillet or large casserole dish.

    Sauté Vegetables: In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3–4 minutes until softened. Stir in the minced garlic and cook for another minute until fragrant.

      Brown the Beef: Increase the heat to medium-high. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until it is browned and no longer pink, about 5–7 minutes. Drain any excess grease if necessary.

        Add Rice & Seasonings: Stir in the uncooked rice, diced tomatoes (with juices), beef broth, corn, smoked paprika, chili powder, salt, and pepper. Mix everything well to combine.

          Bring to a Boil: Bring the mixture to a gentle boil. Reduce the heat to low, cover the skillet with a lid, and let it simmer for about 15 minutes until the rice has absorbed most of the liquid and is tender. Stir occasionally to prevent sticking.

            Add Cheese: Once the rice is cooked, remove the skillet from heat. Sprinkle the shredded cheddar cheese evenly over the top of the casserole. If desired, you can add a little more cheese for an extra cheesy finish!
