One-Pan Cheesy Beef and Rice Casserole

1 lb (450g) ground beef

1 cup uncooked long-grain white rice

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 can (15 oz) diced tomatoes, undrained

2 cups beef broth

1 teaspoon smoked paprika

1 teaspoon dried oregano

1/2 teaspoon black pepper

1 cup frozen corn (optional)

1 1/2 cups shredded cheddar cheese

Salt to taste

Fresh parsley for garnish (optional)

Instructions
 

Sauté the Beef: In a large skillet or a baking dish that can go on the stovetop, heat a tablespoon of oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula as it cooks. Drain excess fat if necessary.

    Add Aromatics: Stir in the diced onion, garlic, and bell pepper to the pan with the beef. Sauté for about 3-4 minutes until the onion becomes translucent.

      Combine Ingredients: Add the uncooked rice to the skillet. Stir until the rice is well-coated with the beef and vegetable mixture.

        Add Liquids and Seasonings: Pour in the can of diced tomatoes (with their juices) and the beef broth. Sprinkle in the smoked paprika, dried oregano, black pepper, and salt to taste. If you're using frozen corn, add it to the mixture now. Stir everything together.

          Simmer: Bring the mixture to a gentle boil, then reduce the heat to low. Cover the skillet with a lid and let it simmer for 20-25 minutes, or until the rice is tender and has absorbed most of the liquid. During this time, check occasionally to ensure nothing is sticking to the bottom of the pan.

            Add Cheese: Once the rice is cooked, remove the lid and sprinkle the shredded cheddar cheese over the top. Cover again for an additional 5-7 minutes until the cheese has melted.

              Garnish and Serve: Once the cheese is melted and bubbly, remove the pan from heat. Garnish with freshly chopped parsley if desired, and serve warm right from the pan.
