One-Pan Cheesy Chicken Broccoli and Rice

1 lb (450g) boneless, skinless chicken breasts, diced

1 cup (190g) long-grain white rice, rinsed

2 cups (475ml) chicken broth

2 cups (150g) fresh broccoli florets (or frozen)

1 cup (100g) shredded sharp cheddar cheese

1 small onion, diced

2 cloves garlic, minced

1 teaspoon paprika

½ teaspoon salt (adjust to taste)

¼ teaspoon black pepper

2 tablespoons olive oil

1 tablespoon butter

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Chicken: In a large skillet or pan over medium heat, add the olive oil and butter. Once hot, add the diced chicken. Season with salt, pepper, and paprika. Cook for about 6-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the pan and set it aside.

    Cook the Aromatics: In the same pan, add the diced onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and continue to cook for an additional minute until fragrant.

      Add Rice & Broth: Stir in the rinsed rice, then pour in the chicken broth. Bring the mixture to a gentle simmer. Scrape the bottom of the pan to release any browned bits from the chicken.

        Combine Chicken & Broccoli: Return the cooked chicken to the skillet and add the broccoli florets. Stir everything together and cover the skillet with a lid. Allow it to simmer on low heat for about 15-20 minutes or until the rice is tender and has absorbed most of the liquid. Check occasionally to ensure it’s not sticking to the bottom.

          Cheesy Finish: Once the rice is cooked, remove the lid and sprinkle the shredded cheddar cheese evenly over the top. Cover again for another 2-3 minutes, allowing the cheese to melt.

            Garnish & Serve: Once the cheese is melted, remove the skillet from the heat. Garnish with chopped fresh parsley, serve warm, and enjoy your delicious one-pan dish!
