Ingredients

12 oz fettuccine pasta

4 cups low-sodium chicken broth

1 cup heavy cream

1 cup freshly grated Parmesan cheese

4 cloves garlic, minced

2 tablespoons unsalted butter

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1/4 teaspoon nutmeg

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Additional grated Parmesan (for serving)

Instructions

Prep the Pan: In a large, deep skillet or a wide pot, drizzle the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned.

Add the Broth: Pour in the chicken broth and bring it to a gentle simmer.

Cook the Fettuccine: Add the uncooked fettuccine pasta to the skillet. Stir well to ensure the pasta is submerged. Let it cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente and has absorbed most of the broth.

Add Cream and Cheese: Lower the heat slightly and stir in the heavy cream, butter, salt, black pepper, and nutmeg. Cook for an additional 3-4 minutes, stirring continuously, until the sauce thickens and is creamy.

Incorporate Parmesan: Gradually sprinkle in the freshly grated Parmesan cheese, stirring constantly until it melts and creates a silky sauce. Taste and adjust seasoning if needed.

Serve: Remove from heat, garnish with freshly chopped parsley, and serve immediately with additional Parmesan on the side.
