Ingredients

2 salmon fillets (6 oz each)

1 bunch of fresh asparagus (about 1 lb)

3 tablespoons olive oil

3 cloves garlic, minced

1 medium lemon (zested and juiced)

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Asparagus: Wash the asparagus and trim the woody ends. Pat them dry with a paper towel and place them in a large bowl.

Make the Marinade: In a small bowl, whisk together the olive oil, minced garlic, lemon zest, lemon juice, dried oregano, paprika, salt, and pepper.

Toss Asparagus in Marinade: Pour half of the marinade over the asparagus and toss to coat evenly. Spread the asparagus in a single layer on one side of a large baking sheet.

Prep the Salmon: Place the salmon fillets on the other side of the baking sheet. Brush the remaining marinade over the salmon, ensuring an even coat. Season with additional salt and pepper if desired.

Bake Everything: Place the baking sheet in the preheated oven and bake for about 12-15 minutes, or until the salmon is cooked through (internal temperature should reach 145°F) and flakes easily with a fork. The asparagus should be tender yet still bright green.

Garnish and Serve: Once cooked, remove the baking sheet from the oven. Garnish the salmon and asparagus with chopped fresh parsley and serve with lemon wedges on the side for an extra citrusy punch.
