1 small onion, diced

3 cloves garlic, minced

1 bell pepper (red or yellow), diced

1 zucchini, diced

1 can (14 oz) diced tomatoes, drained

1 package (9 oz) fresh tortellini (cheese-filled)

1 cup heavy cream

1 cup spinach, roughly chopped

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

½ cup grated Parmesan cheese

Fresh basil for garnish

Heat the Olive Oil: In a large skillet or sauté pan over medium heat, add 2 tablespoons of olive oil and let it warm for about a minute.
