1 pound beef sirloin, thinly sliced

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

8 ounces mushrooms, sliced (cremini or button)

1 cup beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 teaspoon paprika

Salt and pepper, to taste

8 ounces egg noodles

1 cup sour cream

Fresh parsley, chopped (for garnish)

Sauté the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the sliced beef sirloin, season with salt and pepper, and cook until browned, about 4-5 minutes. Remove the beef from the pot and set aside.

    Cook the Vegetables: In the same pot, add the diced onion and sauté for 2-3 minutes until translucent. Stir in the minced garlic and sliced mushrooms, and continue cooking for another 5 minutes until the mushrooms are tender and have released their moisture.
