1 cup quinoa, rinsed and drained

2 cups vegetable broth

1 cup fresh spinach, chopped

1 cup cottage cheese, or ricotta for a creamier option

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 tablespoon olive oil

1 small onion, diced

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

1/4 cup breadcrumbs (optional, for topping)

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

    Cook the Quinoa: Add the rinsed quinoa to the pot, stirring to combine. Pour in the vegetable broth and bring it to a boil. Once boiling, reduce the heat to low and cover. Let simmer for about 15 minutes, or until the liquid is absorbed and the quinoa is fluffy.

      Mix in the Spinach and Cheeses: Remove the pot from heat and stir in the chopped spinach, cottage cheese, mozzarella, and half of the Parmesan cheese. Season with oregano, thyme, salt, and pepper. Mix until everything is well combined and the spinach has wilted.

        Prepare for Baking: If desired, transfer the mixture to a lightly greased baking dish. Sprinkle the remaining Parmesan cheese and breadcrumbs over the top for a crunchy finish.
