Ingredients

12 oz cheese tortellini (fresh or frozen)

2 cups fresh spinach, roughly chopped

1 tablespoon olive oil

3 cloves garlic, minced

1 cup vegetable broth

1 cup heavy cream

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1/4 cup sun-dried tomatoes, chopped (optional)

Fresh basil leaves for garnish

Instructions

Heat the Olive Oil: In a large pot or deep skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

Cook the Tortellini: Add the cheese tortellini to the pot and pour in the vegetable broth. Bring to a gentle simmer, and cook according to package directions until the tortellini is tender (about 3-5 minutes for fresh tortellini or 6-8 minutes for frozen).

Add Cream and Seasoning: Once the tortellini are cooked, lower the heat and stir in the heavy cream, Italian seasoning, salt, and pepper. Let it simmer for 2-3 minutes, allowing the sauce to thicken slightly.

Incorporate Spinach and Cheese: Add the chopped spinach and half of the Parmesan cheese to the pot, stirring until the spinach wilts and the cheese melts into the creamy sauce. If using, stir in the sun-dried tomatoes for an extra burst of flavor.

Melt the Mozzarella: Top the tortellini mixture with the remaining mozzarella and Parmesan cheese. Cover the pot for about 2-3 minutes, allowing the cheese to melt beautifully.

Serve: Once the cheese is melted and bubbly, remove from heat. Garnish with fresh basil leaves before serving. Enjoy your creamy, cheesy, and comforting meal!
