One-Pot Cheesy Taco Pasta

1 pound ground beef (or turkey)

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 tablespoon taco seasoning

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

3 cups chicken broth

12 ounces elbow macaroni (or pasta of choice)

1 can (15 ounces) diced tomatoes with green chilies

1 cup corn (fresh, frozen, or canned)

1 cup black beans, rinsed and drained (optional)

2 cups shredded cheese (cheddar, Monterey Jack, or a mix)

Fresh cilantro, chopped (for garnish)

Sour cream (for serving, optional)

Instructions
 

Cook the Meat: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef (or turkey) and cook until browned, breaking it up with a spatula, about 5-7 minutes. Drain any excess fat if needed.

    Sauté Vegetables: Add the diced onions and bell peppers to the meat, and sauté until the onions become translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.

      Season: Sprinkle in the taco seasoning, smoked paprika, salt, and black pepper. Stir well to coat the meat and vegetables evenly.

        Add Liquid and Pasta: Pour in the chicken broth and diced tomatoes (with their juices). Stir, then add the elbow macaroni. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook, stirring occasionally, until the pasta is tender, about 8-10 minutes.

          Stir in Additional Ingredients: Once the pasta is cooked, stir in the corn and black beans (if using). Mix well to combine.

            Add Cheese: Remove the pot from the heat and stir in the shredded cheese until melted and creamy. Adjust seasoning if necessary.
