One-Pot Cheesy Taco Rice Bake

1 lb (450g) ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 packet (1 oz) taco seasoning

1 cup long-grain rice, rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

2 cups chicken or vegetable broth

1 cup corn kernels (fresh, frozen, or canned)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

2 tablespoons olive oil

Salt and pepper, to taste

Fresh cilantro, for garnish (optional)

Sliced jalapeños, for garnish (optional)

Sour cream, for serving (optional)

Instructions
 

Sauté the Aromatics: In a large, deep oven-safe skillet or pot, heat the olive oil over medium heat. Add the diced onion and cook for about 3-4 minutes, or until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

    Brown the Meat: Add the ground beef (or turkey) to the pan, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain any excess fat.

      Add Seasoning: Stir in the taco seasoning, mixing it well into the meat mixture.

        Combine Remaining Ingredients: Add the rinsed rice, black beans, diced tomatoes with their juices, chicken broth, and corn to the skillet. Stir everything together until combined. Season with salt and pepper to taste.

          Simmer: Bring the mixture to a gentle boil, then reduce the heat to low. Cover the skillet with a lid and let it simmer for about 18-20 minutes, or until the rice is tender and most of the liquid is absorbed. Make sure to check occasionally to ensure the rice doesn't burn.
