8 ounces of uncooked pasta (fusilli or penne works best)

2 large onions, thinly sliced

4 cloves garlic, minced

4 cups vegetable or beef broth

1 cup heavy cream

1 cup shredded Gruyère cheese

1 tablespoon olive oil

1 tablespoon butter

1 teaspoon sugar (to caramelize the onions)

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: ½ cup white wine (for added flavor)

Caramelize the Onions: In a large pot or Dutch oven, heat the olive oil and butter over medium heat. Add the sliced onions and sugar. Cook, stirring occasionally, until the onions are well-browned and caramelized, about 20-25 minutes. Be patient! This is the key to rich flavor.

    Add Garlic and Thyme: Stir in the minced garlic and dried thyme, cooking for an additional 1-2 minutes until fragrant.

      Deglaze (Optional): If using, pour in the white wine to deglaze the pot. Scrape up any flavorful brown bits stuck to the bottom. Let it simmer for about 2-3 minutes until slightly reduced.

        Combine Ingredients: Add the dry pasta to the pot along with the vegetable or beef broth. Stir well to combine, ensuring the pasta is submerged in the broth. Season with salt and pepper to taste. Bring the mixture to a boil.

          Cook Pasta: Reduce heat to a gentle simmer, cover the pot, and cook for about 10-12 minutes or until the pasta is al dente, stirring occasionally to prevent sticking.

            Add Cream and Cheese: Once the pasta is cooked, stir in the heavy cream and half of the Gruyère cheese. Mix until well combined and the cheese is melted. If it’s too thick, add a splash more broth or water.
