Ingredients

2 cups elbow macaroni

1 can (15 oz) sliced peaches in syrup, drained and chopped

3 cups vegetable broth

2 cups shredded sharp cheddar cheese

1 cup ricotta cheese

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions

Combine - In a large pot, add the elbow macaroni, chopped peaches, vegetable broth, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir everything together to combine well.

Cook - Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to medium-low and let it simmer, stirring occasionally, for about 10-12 minutes or until the pasta is al dente and most of the liquid has been absorbed.

Incorporate Cheeses - Remove the pot from heat and stir in the sharp cheddar cheese and ricotta cheese. Mix until the cheeses are melted and everything is fully combined.

Adjust Seasoning - Taste and adjust seasoning with more salt, pepper, or smoked paprika if needed.

Garnish and Serve - Serve the mac and cheese hot, garnished with fresh basil leaves for an aromatic touch. Enjoy your creamy and fruity twist on a classic dish!
