12 oz spaghetti

1 can (14 oz) diced tomatoes, undrained

3 cups vegetable broth

1 medium onion, finely chopped

3 cloves garlic, minced

1 tsp dried oregano

1 tsp red pepper flakes (adjust to taste)

1/2 cup heavy cream or coconut cream for dairy-free

1/2 cup grated Parmesan cheese (optional or nutritional yeast for a vegan option)

1/4 cup fresh basil, chopped

Salt and pepper to taste

2 tbsp olive oil

Instructions
 

In a large pot or deep skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.

    Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Add the uncooked spaghetti, diced tomatoes (with juices), vegetable broth, oregano, and red pepper flakes. Stir well to combine.

        Increase the heat to high and bring the mixture to a boil. Once boiling, reduce the heat to medium-low and cover the pot. Cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente and most of the liquid has been absorbed.

          Remove the pot from heat and gently stir in the heavy cream (or coconut cream) and grated Parmesan cheese (if using). Mix until creamy and well combined.

            Add the chopped fresh basil and season with salt and pepper to taste.
