1 lb chicken breast tenders

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried Italian herbs (oregano, basil)

1/2 teaspoon salt

1/2 teaspoon black pepper

2 large eggs

1 tablespoon Dijon mustard

Cooking spray or olive oil for drizzling

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

    Prepare the Breading Station: In one shallow bowl, whisk together the eggs and Dijon mustard until well combined. In a second shallow bowl, mix the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried Italian herbs, salt, and black pepper until evenly combined.

      Coat the Chicken: Dip each chicken tender first into the egg mixture, allowing any excess to drip off. Next, coat the chicken in the breadcrumb mixture, pressing gently to ensure the crumbs adhere well. Place the coated tenders on the prepared baking sheet in a single layer.

        Spray for Crispiness: Lightly spray the tops of the coated chicken tenders with cooking spray or drizzle with a little olive oil. This will help them achieve a golden, crispy texture as they bake.
