Oven Roasted Garlic Tomato Soup

2 lbs ripe tomatoes, quartered

1 bulb garlic, top sliced off

1 medium onion, chopped

3 tablespoons olive oil

1 teaspoon dried basil

1 teaspoon dried oregano

1 tablespoon balsamic vinegar

2 cups vegetable broth (low sodium)

Salt and black pepper, to taste

Fresh basil leaves, for garnish

Crusty bread, for serving (optional)

Instructions
 

Preheat the Oven:

    Preheat your oven to 400°F (200°C).

      Prepare the Tomatoes and Garlic:

        On a baking sheet, arrange the quartered tomatoes and garlic bulb (cut side up). Drizzle with 2 tablespoons of olive oil, sprinkle with dried basil, oregano, salt, and pepper. Toss to coat.

          Roast the Vegetables:

            Roast the tomatoes and garlic in the oven for about 30-35 minutes or until the tomatoes are softened and slightly caramelized.

              Sauté the Onions:

                While the tomatoes are roasting, heat 1 tablespoon of olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

                  Combine Ingredients:

                    Once roasted, let the garlic cool slightly, then squeeze the sweet roasted garlic out of its skin into the pot with the onions. Add the roasted tomatoes (including the juices) and balsamic vinegar.

                      Add Broth:

                        Pour in the vegetable broth and bring the mixture to a simmer. Let it cook for an additional 10 minutes to blend the flavors.

                          Purée the Soup:

                            Use an immersion blender or carefully transfer the mixture to a blender to purée until smooth. If using a blender, be cautious with the hot liquid.

                              Adjust Seasoning:

                                Taste the soup and adjust seasoning with more salt, pepper, or vinegar as needed.

                                  Serve:

                                    Ladle the soup into bowls. Garnish with fresh basil leaves and drizzle with olive oil. Serving with crusty bread is optional, but highly recommended for dipping!
