Ingredients

2 medium sweet potatoes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon sea salt

¼ teaspoon black pepper

¼ teaspoon cayenne pepper (optional, for heat)

Fresh parsley or cilantro for garnish

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

Prepare the Sweet Potatoes: Wash and peel the sweet potatoes. Slice them into ¼-inch thick rounds for even cooking. If you want them to be extra crispy, make sure the slices are uniform in thickness.

Season the Coins: In a large mixing bowl, toss the sweet potato coins with olive oil, garlic powder, smoked paprika, sea salt, black pepper, and optional cayenne pepper. Ensure each coin is well-coated in the seasoning mixture.

Arrange on Baking Sheet: Spread the sweet potato coins out in a single layer on the prepared baking sheet. Avoid overcrowding to allow for even roasting.

Roast in the Oven: Place the baking sheet in the preheated oven and roast for 20-25 minutes, flipping the coins halfway through. They should turn golden brown and crispy at the edges.

Check for Doneness: Keep an eye on them towards the end of the cooking time to avoid burning. You’re looking for a soft interior and a crispy exterior.

Garnish and Serve: Once roasted, remove from the oven and let them cool slightly. Garnish with fresh parsley or cilantro for a touch of brightness.

Enjoy: Serve warm as a delightful side dish or snack.
