Ingredients

1 bunch of fresh asparagus (about 1 lb), trimmed

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon salt

½ teaspoon black pepper

½ cup grated Parmesan cheese

1 tablespoon fresh lemon juice

Optional: Zest of 1 lemon for added flavor

Fresh parsley, chopped, for garnish

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). This high heat will help achieve crispy edges on the asparagus.

Prepare the Asparagus: Rinse the asparagus under cold water and pat dry. Trim off the tough ends (about the bottom inch) of the stalks.

Season the Asparagus: In a large mixing bowl, combine the asparagus with olive oil, garlic powder, salt, and black pepper. Toss until all the asparagus is evenly coated in the oil and seasonings.

Add the Parmesan: Sprinkle the grated Parmesan cheese over the asparagus and toss gently to distribute the cheese evenly.

Arrange on Baking Sheet: Spread the seasoned asparagus in a single layer on a large baking sheet. Make sure to leave space between each stalk to ensure even roasting.

Roast the Asparagus: Place the baking sheet in the preheated oven and roast for about 12-15 minutes, or until the asparagus is tender and the cheese has melted and turned golden brown.

Finishing Touches: Once done, remove the asparagus from the oven and squeeze fresh lemon juice over the top. If using, add lemon zest for a bright, citrus kick.

Garnish and Serve: Transfer the roasted asparagus to a serving platter and garnish with freshly chopped parsley. Serve warm as a delightful side dish!
