4 medium zucchinis, spiralized into noodles

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 large eggs

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

1 cup marinara sauce

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Zucchini Noodles: In a large colander, place the spiralized zucchini noodles and sprinkle with salt. Allow them to sit for 10-15 minutes to draw out excess moisture. Afterward, gently squeeze the noodles with your hands to remove any remaining water.

      Mix the Cheese Filling: In a mixing bowl, combine the ricotta cheese, 1/2 cup of the shredded mozzarella cheese, the grated Parmesan, eggs, minced garlic, oregano, basil, salt, and pepper. Mix until everything is well incorporated.

        Combine Noodles and Filling: Add the drained zucchini noodles to the cheese mixture. Toss everything together until the noodles are evenly coated.

          Layer the Bake: Spread a thin layer of marinara sauce at the bottom of a 9x13-inch baking dish. Pour the zucchini noodle and cheese mixture into the dish, smoothing it out evenly. Top with the remaining marinara sauce and sprinkle the remaining mozzarella cheese on top.

            Bake: Cover the dish with aluminum foil (to prevent over-browning) and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15 minutes or until the top is golden and bubbly.
