2 ripe peaches, diced

1 cup strawberries, hulled and halved

1 cup blueberries, fresh

1 cup raspberries, fresh

1 tablespoon honey (or maple syrup for a vegan option)

Juice of 1 lemon

1 tablespoon fresh mint, chopped (plus extra for garnish)

1/2 teaspoon vanilla extract

Pinch of salt

Optional: 1/4 cup crumbled feta cheese or whipped coconut cream for a non-dairy option

Prepare the Fruits: Start by washing all the berries under cold water. Drain well. Dice the peaches into bite-sized pieces and set aside.
