Ingredients

2 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup unsalted butter, melted and slightly cooled

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

1 1/2 cups fresh peaches, peeled and diced

1/2 cup chopped walnuts or pecans (optional)

Turbinado sugar for topping (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease with cooking spray.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon until well combined.

Prepare Wet Ingredients: In another bowl, whisk together the melted butter, eggs, vanilla extract, and buttermilk until smooth.

Combine Mixtures: Pour the wet mixture into the dry ingredients and gently stir until just combined. Be careful not to overmix; it’s okay if there are a few lumps.

Fold in Peaches and Nuts: Gently fold in the diced peaches and nuts (if using), ensuring an even distribution without mashing the peaches.

Fill Muffin Tins: Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full. Sprinkle a little turbinado sugar on top of each muffin for added crunch and sweetness, if desired.

Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes or until the tops are golden and a toothpick inserted in the center comes out clean.

Cool and Serve: Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. Enjoy them warm or at room temperature!
