4 boneless, skinless chicken thighs

2 ripe peaches, pitted and sliced

1 medium red onion, thinly sliced

3 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon balsamic vinegar

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper, to taste

½ cup chicken broth

¼ cup feta cheese, crumbled (optional)

Fresh basil leaves for garnish (optional)

Instructions
 

Prepare the Chicken: Season the chicken thighs with salt, pepper, and half of the thyme leaves.

    Heat the Skillet: In a large skillet, heat the olive oil over medium-high heat. Once shimmering, add the seasoned chicken thighs to the pan and sear them for about 5-7 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Onions and Garlic: In the same skillet, add the sliced red onion and sauté for 3-4 minutes until softened. Add minced garlic and cook for another minute until fragrant.

        Add Peaches: Stir in the sliced peaches and cook for 2-3 minutes until they start to soften and release their juices.

          Deglaze the Pan: Pour in the balsamic vinegar and chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer.

            Combine Chicken and Reduce Sauce: Return the chicken to the skillet, sprinkle the remaining thyme, and simmer everything together for an additional 5 minutes to allow the flavors to meld.

              Finish and Serve: If using, crumble feta cheese over the chicken just before serving. Garnish with fresh basil leaves. Serve the Peachy Chicken Delight straight from the skillet with a side of rice or a fresh salad.
