2 medium ripe peaches, sliced

1 cup fresh ricotta cheese

2 tablespoons honey (plus extra for drizzling)

1 teaspoon vanilla extract

4 slices of your favorite artisanal bread (sourdough or whole grain works well)

2 tablespoons unsalted butter (softened)

A pinch of sea salt

Fresh mint leaves for garnish (optional)

Crushed pistachios or walnuts for crunch (optional)

Prepare the Ricotta Spread: In a medium bowl, combine the fresh ricotta cheese, honey (2 tablespoons), vanilla extract, and a pinch of sea salt. Mix until smooth and creamy. Set aside.

    Toast the Bread: Heat a skillet over medium heat or preheat your oven's broiler. Spread softened butter on one side of each bread slice. Place the bread, buttered side down, in the skillet or on a baking sheet if using the oven. Toast until golden brown and crispy, about 2-3 minutes per side, or under the broiler for about 2 minutes, keeping a close eye.
