2 cups heavy whipping cream

1 cup whole milk

3/4 cup granulated sugar

1 teaspoon vanilla extract

2 ripe peaches, peeled and diced

1 tablespoon lemon juice

For Serving:

Fresh peach slices (optional)

Crushed graham crackers for added texture (optional)

Make the Cookies: Preheat your oven to 350°F (175°C). In a small bowl, whisk together the flour, baking soda, salt, and cinnamon; set aside.

    In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing until well combined.

      Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the chopped fresh peaches gently.

        Line a baking sheet with parchment paper. Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheet, spacing about 2 inches apart. Bake for 10-12 minutes or until the edges are golden but the centers remain soft. Let cool completely on a wire rack.

          Prepare the Peach Ice Cream: In a medium bowl, combine the heavy whipping cream, whole milk, sugar, and vanilla extract. Stir until the sugar is dissolved.
