1 cup jasmine rice

1 ¾ cups coconut milk

2 ripe peaches, diced

1 cup cooked shredded chicken (or chickpeas for a vegetarian option)

1/4 cup red onion, finely chopped

1/4 cup fresh basil leaves, chopped

1 tablespoon honey (optional)

1 tablespoon lime juice

Salt and pepper to taste

1/4 cup sliced almonds (for garnish)

1/4 teaspoon chili flakes (optional)

Cook the rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rice and coconut milk.
