Peaches and Cream Crumble Bars

4 cups fresh peaches, peeled and diced

1/4 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon cornstarch

1/2 teaspoon vanilla extract

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup heavy cream

For the Crumble Topping:

1 1/2 cups all-purpose flour

1 cup rolled oats

1/2 cup brown sugar, packed

1 teaspoon cinnamon

1/2 cup unsalted butter, melted

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line a 9x13-inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Prepare the Peach Filling: In a medium bowl, combine the diced peaches, granulated sugar, lemon juice, cornstarch, vanilla extract, and a pinch of salt. Gently mix until the peaches are well coated. Set aside to allow the juices to develop while you prepare the rest of the layers.
