1 lb (450g) beef steak (such as sirloin or ribeye), cut into 1-inch cubes

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

4 tablespoons unsalted butter

6 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried)

Juice of 1 lemon

Fresh parsley, chopped, for garnish

Instructions
 

Prepare the Steak: Pat the beef steak cubes dry with paper towels. This helps achieve a nice sear. Season generously with salt and pepper on all sides.

    Heat the Oil: In a large skillet over medium-high heat, add the olive oil. Allow it to get hot but not smoking.

      Sear the Steak Bites: Carefully add the steak cubes in a single layer. Avoid overcrowding the pan; you may need to cook them in batches. Sear for about 2-3 minutes without stirring to get a nice crust. Flip and sear the other side for another 2-3 minutes, or until cooked to your preferred doneness (medium-rare is about 130°F or 54°C).

        Remove and Rest: Once seared, transfer the steak bites to a plate and tent with foil to keep warm while you make the sauce.

          Make the Garlic Butter Sauce: In the same skillet, lower the heat to medium and add the butter. Once melted, add the minced garlic, rosemary, and thyme. Sauté for about 1-2 minutes, stirring constantly, until the garlic is fragrant and just starting to brown (be careful not to burn it).

            Add Lemon Juice: Pour in the lemon juice and stir well to combine. Let the sauce bubble for about 1 minute, allowing the flavors to meld.

              Combine: Return the cooked steak bites to the skillet and toss them in the garlic butter sauce until well coated. Cook for an additional minute to heat through.

                Serve: Plate the steak bites and drizzle with any remaining garlic butter sauce from the pan. Garnish with chopped parsley for a fresh finish.
