Pesto Roasted Veggie Sandwiches

1 medium zucchini, sliced into thin rounds

1 red bell pepper, sliced into strips

1 small red onion, sliced into rings

1 cup cherry tomatoes, halved

1 cup mushrooms, sliced

3 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1 cup store-bought or homemade basil pesto

4 slices of crusty sourdough or ciabatta bread

4 oz fresh mozzarella cheese, sliced

Fresh arugula or spinach, for topping

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prep the Veggies: In a large bowl, combine the zucchini, red bell pepper, red onion, cherry tomatoes, and mushrooms. Drizzle with olive oil, and season with salt, pepper, garlic powder, and Italian seasoning. Toss until all the vegetables are well coated.

      Roast the Vegetables: Spread the seasoned vegetables evenly on a baking sheet. Roast in the preheated oven for about 20-25 minutes, or until the veggies are tender and slightly caramelized, stirring halfway through for even cooking.

        Assemble the Sandwiches: While the vegetables are roasting, prepare the bread. Lightly toast the sourdough or ciabatta slices. Once toasted, spread a generous layer of basil pesto on each slice.

          Layer the Ingredients: On two pieces of toasted bread, layer the roasted vegetables evenly, followed by slices of fresh mozzarella cheese. Top with a handful of arugula or spinach.

            Finish with Bread: Top the assembled sandwiches with the remaining toasted bread slices, pesto side down, to complete the sandwiches.
