Ingredients

2 cups rolled oats

1/2 cup shredded unsweetened coconut

1/4 cup brown sugar or coconut sugar

1 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon cinnamon

2 cups coconut milk (or regular milk)

1/4 cup melted coconut oil (or regular oil)

2 large eggs

1 teaspoon vanilla extract

1 cup crushed pineapple (drained)

1/2 cup chopped walnuts or pecans (optional)

Fresh pineapple slices and toasted coconut (for topping)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease a 9x9 inch baking dish or line it with parchment paper for easy removal.

Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, shredded coconut, brown sugar, baking powder, salt, and cinnamon. Stir well to combine.

Mix Wet Ingredients: In another bowl, whisk together the coconut milk, melted coconut oil, eggs, and vanilla extract until smooth and fully combined.

Combine Mixtures: Pour the wet ingredients into the dry mixture and stir until everything is well incorporated. Gently fold in the crushed pineapple and nuts (if using) until evenly distributed.

Transfer to Baking Dish: Pour the mixture into the prepared baking dish, spreading it evenly.

Bake: Place the dish in the preheated oven and bake for 30-35 minutes, or until the oatmeal is set and the top is slightly golden.

Cool and Serve: Once baked, remove the dish from the oven and allow it to cool for about 10 minutes before slicing. You can serve it warm or at room temperature.

Add Toppings: For an extra touch of paradise, top each serving with fresh pineapple slices and a sprinkle of toasted coconut.

Enjoy: Serve it as a delightful breakfast or a sweet snack throughout the day, and enjoy the tropical flavors!
