Pineapple Glazed Tofu

14 oz firm tofu, pressed and cubed

1 cup fresh pineapple juice

1/4 cup soy sauce

2 tbsp brown sugar

1 tbsp rice vinegar

1 clove garlic, minced

1 tsp ginger, grated

1 tbsp cornstarch

2 tbsp water

2 tbsp vegetable oil (for frying)

1/4 tsp black pepper

1/4 tsp salt

Fresh pineapple chunks for garnish

Chopped green onions for garnish

Sesame seeds for garnish

Prepare Tofu: Press the tofu using a heavy object for at least 30 minutes to remove excess moisture. Once pressed, cut the tofu into 1-inch cubes.

    Make the Pineapple Glaze: In a medium saucepan, combine the fresh pineapple juice, soy sauce, brown sugar, rice vinegar, garlic, ginger, black pepper, and salt. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves.

      Thicken the Sauce: In a small bowl, mix cornstarch with water until smooth. Gradually add this mixture to the sauce while continuously stirring. Continue to cook for another 2-3 minutes until the sauce thickens. Remove from heat and set aside.

        Fry the Tofu: In a large skillet, heat vegetable oil over medium-high heat. Add the cubed tofu and cook for about 3-4 minutes per side until golden brown and crispy. Avoid overcrowding the pan; you may need to cook in batches.

          Glaze the Tofu: Once the tofu is cooked, reduce the heat to medium and pour the pineapple glaze over the tofu. Gently toss to coat evenly, allowing the tofu to absorb the flavors for about 2-3 minutes.

            Serve: Transfer the glazed tofu to a serving dish. Garnish with fresh pineapple chunks, chopped green onions, and a sprinkle of sesame seeds for an added crunch. Serve warm with steamed rice or quinoa for a complete meal.
