2 cups fresh pineapple juice

1 cup freshly squeezed lemon juice (about 4-6 lemons)

4 cups cold sparkling water (or soda water)

1 cup sugar (adjust for sweetness)

1 cup water

1 teaspoon fresh mint leaves, chopped (optional)

Pineapple slices and lemon wheels for garnish

Make the Simple Syrup: In a small saucepan over medium heat, combine 1 cup of water and 1 cup of sugar. Stir until the sugar is completely dissolved. Remove from heat and let it cool.

    Juice the Fruits: While the simple syrup is cooling, squeeze the fresh lemons until you have 1 cup of lemon juice. If you don’t have a juicer, you can use a handheld citrus squeezer or even a fork.
