1 cup pumpkin puree (canned or freshly made)

1/3 cup honey or maple syrup

1/4 cup coconut oil, melted (or vegetable oil)

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour (or whole wheat flour)

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1/4 cup chia seeds

1/2 cup walnuts or pecans, chopped (optional)

1/3 cup chocolate chips (optional, for added sweetness)

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan with cooking spray or line it with parchment paper for easy removal.

    Mix Wet Ingredients: In a large bowl, combine the mashed bananas, pumpkin puree, honey (or maple syrup), melted coconut oil, eggs, and vanilla extract. Mix until everything is well incorporated.
