1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup brown sugar, packed

1 teaspoon baking powder

1 teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon ground ginger

2 large eggs

1 cup canned pumpkin puree (not pumpkin pie filling)

½ cup vegetable oil

1 teaspoon vanilla extract

1 cup semi-sweet chocolate chips

Optional: Whipped cream or cream cheese frosting for topping

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger until well combined.

      Combine Wet Ingredients: In another bowl, beat the eggs and then add the pumpkin puree, vegetable oil, and vanilla extract. Mix until smooth and well blended.

        Combine Mixtures: Gradually add the wet ingredients to the dry ingredients, stirring gently with a spatula or spoon until just combined. Be careful not to overmix.

          Add Chocolate Chips: Fold in the chocolate chips gently until evenly distributed throughout the batter.

            Fill the Cupcake Liners: Divide the batter evenly among the prepared muffin tin, filling each cupcake liner about ¾ full.

              Bake: Bake in the preheated oven for 18 to 22 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
