Ingredients

1 ½ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

1 teaspoon ground cinnamon

¼ teaspoon ground nutmeg

¼ teaspoon ground ginger

½ cup granulated sugar

½ cup packed light brown sugar

½ cup vegetable oil

2 large eggs

1 cup pure pumpkin puree (canned or homemade)

1 teaspoon vanilla extract

1 cup semi-sweet chocolate chips

½ cup chopped walnuts or pecans (optional)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan or line it with parchment paper.

Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger until well combined.

Mix Sugars and Oil: In a large bowl, whisk together the granulated sugar, brown sugar, and vegetable oil until the mixture is smooth and creamy.

Add Eggs and Pumpkin: Add the eggs one at a time, whisking well after each addition. Then, mix in the pumpkin puree and vanilla extract until fully combined.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Avoid over-mixing to keep the loaf tender.

Fold in Chocolate Chips & Nuts: Carefully fold in the chocolate chips and walnuts or pecans if using, ensuring they are evenly distributed throughout the batter.

Pour into Pan: Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

Bake: Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.

Cool: Remove the loaf from the oven and cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.

Slice and Serve: Once cooled, slice the loaf and enjoy it as a delicious breakfast treat or an afternoon snack. Store any leftovers in an airtight container.
