1 cup rolled oats

1 cup all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

1/4 tsp salt

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

1/2 cup canned pumpkin puree

1 large egg

1 tsp vanilla extract

1/2 cup chocolate chips

1/4 cup chopped walnuts (optional)

Instructions
 

Preheat the oven to 350°F (175°C) and lightly grease a 9x9 inch baking pan or line with parchment paper for easy removal.

    In a large bowl, combine the rolled oats, all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Whisk together until well mixed.

      In another bowl, mix the melted butter, brown sugar, granulated sugar, pumpkin puree, egg, and vanilla extract. Whisk until smooth and creamy.

        Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid overmixing; it’s okay if there are a few lumps.

          Fold in the chocolate chips and chopped walnuts (if using) gently into the batter.

            Spread the batter evenly into the prepared baking pan, smoothing the top with a spatula.

              Bake in the preheated oven for 25-30 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.

                Remove from the oven and allow the bars to cool in the pan for about 10 minutes before lifting them out using the parchment paper. Let them cool completely on a wire rack.

                  Cut into squares or bars and enjoy! Store any leftovers in an airtight container for up to a week.
