2 cups rolled oats

1 cup pumpkin puree (unsweetened)

1/2 cup almond butter (or any nut/seed butter of your choice)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/2 cup chopped nuts (walnuts, pecans, or almonds)

1/2 cup mini chocolate chips or raisins (optional)

A pinch of salt

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, almond butter, honey (or maple syrup), and vanilla extract. Stir well until smooth and fully incorporated.

      Combine Dry Ingredients: In another bowl, mix the rolled oats, ground cinnamon, nutmeg, ginger, and salt. Make sure the spices are evenly distributed throughout the oats.

        Combine Mixtures: Gradually add the dry ingredients to the wet mixture. Stir until everything is well combined. The mixture should be slightly sticky.

          Add Nuts & Chocolate: Fold in the chopped nuts and chocolate chips (if using), ensuring they are evenly dispersed throughout the mix.

            Form Bites: Using your hands, shape the mixture into small bite-sized balls (about 1 inch in diameter). Place the balls onto the prepared baking sheet, spacing them about 1 inch apart.

              Bake: Bake in the preheated oven for 15-20 minutes or until lightly golden and firm to the touch.

                Cool Down: Once baked, remove from the oven and let the granola bites cool on the baking sheet for 10 minutes. Then transfer them to a wire rack to cool completely.

                  Store: Once cooled, store the Pumpkin Spice Granola Bites in an airtight container at room temperature for up to one week, or in the fridge for longer freshness.
