Ingredients
  

1 cup all-purpose flour

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp ground ginger

1/2 cup pumpkin puree (canned or fresh)

1/4 cup vegetable oil

2 large eggs

1 tsp vanilla extract

1/2 cup chopped pecans or walnuts (optional)

1/2 cup white chocolate chips or dark chocolate chips (optional)

A sprinkle of coarse sugar for topping

Instructions
 

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, whisk together the flour, brown sugar, granulated sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger until fully combined.

      In another bowl, combine the wet ingredients: pumpkin puree, vegetable oil, eggs, and vanilla extract. Whisk these together until you achieve a smooth consistency.

        Add the wet mixture to the dry ingredients and gently fold to combine. Be careful not to overmix; it’s okay if a few lumps remain.

          If desired, fold in the chopped nuts and/or chocolate chips for added texture and flavor.

            Scoop the batter onto the prepared baking sheet using a cookie scoop or tablespoon, leaving about 2 inches of space between each dollop. The batter should be heaped slightly as it won't spread significantly.

              Sprinkle the tops of the muffin batter with coarse sugar for a delightful crunch.

                Bake in the preheated oven for 15-18 minutes, or until the muffin tops are golden brown and a toothpick inserted into the center comes out clean.

                  Once baked, remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
