1 cup rolled oats

1/2 cup canned pumpkin puree

1/4 cup natural nut butter (e.g., almond or peanut)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon pumpkin pie spice

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup ground flaxseed (optional for added nutrition)

1/4 cup chocolate chips (optional for sweetness)

1/4 cup chopped nuts or seeds (optional for crunch)

Instructions
 

In a medium-sized mixing bowl, combine the rolled oats, canned pumpkin puree, nut butter, honey (or maple syrup), and vanilla extract. Stir until all the ingredients are thoroughly mixed.

    Add the pumpkin pie spice, cinnamon, and salt into the mixture, stirring well to evenly distribute the spices throughout the mixture.

      If using, fold in the ground flaxseed, chocolate chips, and chopped nuts or seeds until fully incorporated. The mixture should be thick and slightly sticky.

        With your hands or a small cookie scoop, portion out about 1 tablespoon of the mixture and roll it into a ball. Repeat with the remaining mixture, placing the energy balls on a parchment-lined plate or tray.
