For the Dough:

2 cups masa harina (corn flour)

1 ½ cups warm water

1 teaspoon salt

1 tablespoon vegetable oil (optional)

For the Filling:

1 cup shredded cheese (queso fresco or mozzarella)

½ cup refried beans (black or pinto)

¼ cup cooked and seasoned ground meat (optional - pork or chicken)

½ cup finely chopped cooked spinach (optional)

1 teaspoon ground cumin

Salt and pepper to taste

For the Curtido (Cabbage Slaw):

2 cups finely shredded cabbage

½ cup grated carrots

1/4 cup finely chopped onion

1/4 cup apple cider vinegar

1 teaspoon oregano

Salt to taste

Instructions
 

Make the Dough:

    - In a large mixing bowl, combine the masa harina and salt. Gradually add warm water, mixing with your hands until you get a smooth and pliable dough. If using, incorporate vegetable oil for added richness.

      - Let the dough rest for about 15 minutes, covered with a damp cloth to prevent drying.

        Prepare the Filling:

          - In a bowl, mix the shredded cheese, refried beans, ground meat (if using), chopped spinach, cumin, salt, and pepper until well combined.

            Make the Curtido:

              - In a separate bowl, combine the shredded cabbage, grated carrots, chopped onion, apple cider vinegar, oregano, and salt. Mix well, and let it sit for at least 30 minutes to develop flavors.

                Form the Pupusas:

                  - Divide the dough into equal balls (about the size of a golf ball). Flatten each ball into a disc.

                    - Place a spoonful of the filling in the center of each disc, and carefully fold the edges over to encase the filling. Gently flatten the filled dough ball to form a thicker tortilla, ensuring it’s sealed well.

                      Cook the Pupusas:

                        - Heat a non-stick skillet or griddle over medium heat. Lightly grease with oil if desired.

                          - Cook each pupusa for about 3-4 minutes on each side, or until golden brown and slightly crispy, ensuring the filling is melted and heated through.

                            Serve:

                              - Serve the pupusas hot, accompanied by the curtido and a side of salsa or hot sauce for extra flavor.
