1 lb ground chicken

2 tablespoons vegetable oil

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 bell pepper, finely diced

1 cup water chestnuts, chopped

1/4 cup green onions, chopped

1/4 cup soy sauce (or tamari for gluten-free)

2 tablespoons hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

Salt and pepper to taste

1 head of butter or iceberg lettuce, leaves separated

Optional toppings: chopped peanuts, cilantro, or sriracha sauce

Instructions
 

Heat the oil: In a large skillet, heat the vegetable oil over medium-high heat.

    Cook the chicken: Add the ground chicken and cook until browned, breaking it apart with a spatula (about 5-7 minutes).

      Add aromatics: Stir in the minced garlic and ginger, cooking for another minute until fragrant.

        Incorporate vegetables: Add the diced bell pepper, chopped water chestnuts, and green onions. Cook for 3-4 minutes or until the vegetables are tender.
